Culatello di Zibello D.O.P.

Since the Middle Ages the careful processing and maturation of Culatello from Zibello have represented a family secret, a cultural heritage handed down for years and still rooted in folk traditions.

 

Culatello has a very delicate flavour, persistent aroma and a sweet inimitable touch deriving from the small amount of salt added. When cut, slices are uniform red with white fat marbling between lean parts.
